T e q u i l a /

Tequila is produced in the state of jalisco and small parts of guanaquato, michoacan,
nayarit, and tamaulipas. all tequila is produced exclusively from agave tequila weber
blue variety.

Blanco tequilas are typically bottled after distillation, though they may be rested
in stainless steel tanks for up to 60 days. blanco tequilas are considered to be the
purest expression of the agave, as the flavors are not influenced by barrel aging.

Reposado tequilas are aged for a minimum of two months and up to
a year in large oak casks or smaller barrels. the flavors imparted on the
tequila will vary depending on the size and type of barrels used, as well
as how long the tequila is aged.

Anejo tequilas are aged for one to three years in government-sealed
barrels no larger than 600 liters. due to the extended aging time and
the smaller barrels used, much more oak influence is imparted on the
tequila.

Extra Anejo a newer category created in 2006, extra anejo tequilas
are aged for a minimum of three years in government-sealed barrels no
larger than 600 liters. even more oak influence is imparted on these
tequilas due to the increased exposure to barrel.

M e z c a l  /

Mezcal may be produced from about 30 different species of agave. The most
commonly used agave in mezcal production is the espadin , which is considered the
genetic mother to the blue agave. many mezcals are produced using wild-growing
species of agave. most mezcal is produced in oaxaca, though it is also produced
in durango, guanajuato, guerrero, san luis potosí, tamaulipas and zacatecas. the
majority of mezcal is bottled without aging ( joven), though some producers will age
mezcal like tequila.

S o t o l /

Sotol is produced from the desert spoon plant, a wild growing evergreen shrub that
is indigenous to chihuahua, durango and coahuila. there are very few commercially
produced examples of sotol, making it a rare and extremely unique spirit.

B a c a n o r a /

Bacanora it is produced from agave pacifica, also called agave yaquiana, a plant
that grows in the mountain range of the state. bacanora has been produced for
over 300 years, and the secrets of its elaboration have been taught through many
generations. the production of bacanora was illegal until 1992, though it was
bootlegged for many generations. there are very few commercial examples of
bacanora. this is the blind burro’s signature sipping spirit!!!!

NOM stands for norma oficial mexicana. the nom identifier on a bottle of tequila
means that the tequila meets government standards. it does not speak to the quality
of the product, however. the number
